No-Bake Dessert Recipe for Spring

🪺 Happy first day of spring tomorrow! Here’s a free, no-bake treat recipe for you to celebrate. These are great for the kids to help with if you need to keep them busy too! You may know them as Haystacks, but let’s call them Bird's Nests today! 😉



Spring No-Bake Cookies


Ingredients:

  • 1 Bag of butterscotch chips

  • 1 Bag of semi-sweet chocolate chips

  • 1 Can of chow mein noodles

  • 1 Bag of chocolate eggs (whichever ones you love most)

  • 1/2 Cup of cashews (optional)

  • Parchment paper

  • Large, microwave-safe bowl


Directions:

1. Lay out a large piece of parchment paper and set aside.

2. Put your butterscotch chips and chocolate chips in a large, microwave-safe, heatproof bowl.

3. Heat the chips in the microwave for 30 second bursts, until melted. Stir in between each burst to encourage even melting. Be careful not to overheat! When it’s almost melted, stir it extra so the residual heat melts the remaining lumps.

4. (You can also melt your chips over a double boiler, if you have one.)

5. Once your chocolate and butterscotch are melted, add your can of chow mein noodles and stir until coated. Be gentle so the noodles don’t break!

6. (Optional) Add in cashews! It gives a little salty/sweet taste but my family prefers them without cashews. Follow your heart on this one.

7. Scoop out a spoonful of the mix and place it on your parchment paper. Immediately press in your chocolate eggs to the top. (Be gentle!) This will allow the eggs to stick to your cluster as it hardens.

8. Let the clusters firm up for about 30 minutes, then enjoy! Store any extra in a covered container at room temperature.
